石榴苗由地上部分和地下部分组成。地下部分统称根系，由各级骨干根和须根组成。地上部分包括树干和树冠，树冠则是由各级枝条和叶片组成。地上和地下部的结合处是根颈。

石榴苗是多年生落叶灌木或小乔木，在热带则变为常绿植物，树高一般为2.5～5米，最高可达8米左右。冠径一般为3～4米，最大可达6米以上。在自然状态下，多数为灌木树形多为圆头形，人工整形的多为有主干的小乔木或开心形灌木。
